White wine, fermented in new 500 liter acacia barrels and batonnage with the fine lees for 6 months, to give the wine greater volume and complexity. The acacia wood enriches it with aromas of ripe yellow fruits, giving the wine a very different profile to that of oak aging.
- 100% White Grenache from old vines from the Les Rotes estate.
- Pre-fermentative cold maceration with the whole grapes at 3ºC for two days, then destemming and brining with the skins for another three days also at 3ºC. The grapes are then pressed and the must goes directly into the barrel. When it reaches 15ºC, fermentation begins, which is carried out at a controlled temperature of 16ºC.
- Once fermentation is complete, the wine remains for six months in the same acacia barrel where it has fermented with batonnage every two days with its fine lees.
- The entire stabilization process is carried out naturally by cooling in a cold room at 0 ºC where the wine remains until bottling.
- Elvira is a wine for immediate consumption, although due to its volume and structure it can evolve positively in bottle for the next 5 years or more.
Approximate production 600 - 1.200 bottles per year.
