Elegance in a Bottle
The plum tree is the fruit tree long cultivated by our family, whose fruit is very present in this wine.
- Red wine aged for 12 months in new (50%) fine-grained French oak barrels.
- Blend of hairy Grenache and Carignan from the old vineyards of the Les Rotes estate.
- Pre-fermentative cold maceration for two days in a cold room at 3ºC. The grapes are then destemmed, preserving the whole grains, and placed in a tank where they will take between 5 and 8 days, depending on the ambient temperature, to reach 15ºC, at which point fermentation begins.
- Alcoholic fermentation in stainless steel vats at a controlled temperature between 26 and 28ºC.
- Maceration with the skins for 15 days.
- It can evolve positively in the bottle for the next 10 years, although it is suitable for immediate consumption.
Production of approximately 1.500 bottles each year.
