Lo Cirerer
The Cherry Tree is the fruit tree long cultivated by our family, whose fruit is very present in this wine.
- Red wine aged for 6 months in fine-grained French oak barrels and 6 months in stainless steel tanks.
- Blend based on the varieties Grenache Noir and Grenache Peluda. Accompanied by Carignan and in a very small proportion also Cabernet Sauvignon and Merlot. With a slight touch of freshness provided by a small percentage of white grape varieties.
- Pre-fermentative cold maceration for two days in a cold room at 3ºC. The grapes are then destemmed, preserving the whole grains, and placed in a tank where they will take between 5 and 8 days, depending on the ambient temperature, to reach 15ºC, at which point fermentation begins.
- Alcoholic fermentation in stainless steel vats at a controlled temperature between 26 and 28ºC. Maceration with the skins for 15 days. Malolactic fermentation with its indigenous lactic bacteria at 20ºC.
- It can evolve positively in bottle for the next 5 years, although it is suitable for immediate consumption.
Production of approximately 15.000 bottles each year.
